Kaju Katli / Cashew fudge

Kaju Katli


Before one month I never thought I would make this sweet myself, this happened only because of the blogosphere.   My son likes Kaju Katli very much; this also motivated me to try this recipe.  

Ingredients:
  • Raw Cashew – 1 cup
  • Sugar  -   ½ cup
  • Water-  ¼ cup
  • Ghee -  1 tsp

Procedure:
1. Grinding Cashews is very very important step, cashews should be in room temperature while grinding.  Grind it using the mixer grinder. Just grind it for 30- 40 seconds, without stopping.  It will be little coarse.

2. Melt the sugar with water in a medium flame.  Wait for one string consistency, in candy thermometer it should be 230 degree to 240 degree F.

3. Then add the grounded cashew mixture to the sugar syrup.

4. Mix it well until you can make a ball out of this mixture.  You have to be more cautious because it will take only 10 to 20 seconds. Switch of the stove.
 
5. When it is still warm, knead it well and spread it using a greased rolling pin.  Now you can make a thin diamond shape Katlis out of the rolled dough.
